The Story

Basic Fresh Pasta

Ingredients
- 2 cups flour
- 3 large eggs
- Pinch of sea salt
Instructions
- Make a well in the flour on a wooden board.
- Crack eggs into the center. Add salt.
- Slowly pull flour inward with a fork.
- Knead 8–10 minutes until smooth.
- Rest dough 30 minutes.
- Roll thin. Cut into ribbons.
- Boil in salted water 2–3 minutes.
Serve with sage-infused olive oil and grated cheese.
Sage-Infused Tuscan Soup

Simple Sage & White Bean Broth
- 2 cups cooked white beans
- 4 cups vegetable broth
- 1 clove garlic
- 6–8 fresh sage leaves
- Olive oil
- Sea salt
Simmer beans and broth.
Warm olive oil gently with sage and garlic until fragrant.
Add oil mixture to soup.
Salt to taste.
Let it sit before serving. Sage deepens as it rests.
